Episode 13: Pie School Is In Session!

Not only did this utterly original pie win the amateur category at the Pie Council of America’s 2016 bakeoff, it also finally introduced Andrea and Stefin to the joys of that popular girdle-buster, cookie butter. Andrea discussed her pie crust evolution, starting with Cook’s Illustrated Foolproof Pie Crust, followed by the Art of the Pie dough recipe. Andrea enjoyed a new mixing technique with a flexible plastic bowl scraper. There are also several ways to conquer your pie-crust fears, including whacking your chilled dough with your rolling pin.   1. Great fun to listen to Stefin and Andrea are who are full of great suggestions, even for me, who will never be a devoted or even enthusiastic baker. Latest fabulous idea from these two: my son, who is gluten free, will now be treated to a key lime pie with a crust made with non-gluten graham cracker crust. Thank you!
