Episode 34: Quick Bite: Popsicles

Back in Episode 30 in the Globetrotting Gourmet segment, we discussed frozen treats around the world, which kicked off Andrea’s current Popsicle obsession. Here’s the base recipe:

Recipe makes 4-6 popsicles, depending on the size of your molds.

About 2 cups fruit, (freeze fruit first for a better consistency)
¼ cup sugar
½ cup full fat Greek Yogurt (optional: add a juice if you’re not a yogurt fan)
½ cup water
1-2 tsp. enhancers…mint or another herb; vanilla extract; orange, lime or lemon zest or juice, or if you’re making ‘poptails’ – that’s a popsicle with a cocktail twist – it would be 2-3 T of liqueur, such as tequila or rum.

Whiz all your ingredients in a blender, pour into molds or cups, and freeze overnight. Many recipes call for straining the fruit through a sieve, but I’m a big fan of the pulp from fruit, so I skip this step.

Raspberry and lemon
Blueberry-banana-lemon
Raspberry-peach-prosecco
Cucumber-lime-ginger
