Episode 72: Tapioca Pearls Uncovered in London!

Andrea’s raving about the Lime Sablé Sandwiches by Fearless Baker author Erin McDowell (apologies for calling her Erin McDonald on the show!) while Stefin’s still thanking listener Amy for those Raspberry Muffins that are helping her use up all six pounds of wheat germ she mistakenly ordered. A brief nod to the underrated citrus fruit grapefruit, which our hosts didn’t feature in an episode this time around, but are enjoying nonetheless. Stefin’s recent find is the Grapefruit Almond and Lemon Thyme Cake from Ocada while Andrea is eyeing a Grapefruit Gingersnap Pie and thinking about Grapefruit Bars.

Stefin gamely embarked on the challenge of locating tapioca pearls in London, ultimately finding exactly what she needed (and many more options) at her local Asian grocery store. Our hosts and their husbands both loved the warm, comforting Coconut Tapioca Pudding with Mango and Lime from Kay Chun at Food & Wine, and Stefin thinks the smell alone earns this dessert a top spot. Both Andrea and Stefin would be happy to eat the delicious tapioca pudding warm from the pot, even without the mango lime puree (Stefin’s daughter’s favorite part of the dessert!) Andrea thought that the proportions were slightly off, as she ended up with a lot of pudding and no mango puree leftover. Not that she’s complaining…

Listeners, any tips on cutting a mango and not wasting all of the fruit?

Up next week, an Orange Polenta Cake from Jamie Oliver that’s naturally gluten-free using polenta and almond flour, in place of regular wheat flour. If you want to bake along with us, be sure to locate some orange blossom water and cardamom pods in advance. Stefin is quite familiar with polenta cake, a popular item in London bakeries, while Andrea is looking forward to her first time baking with polenta.

Finally, our hosts decided to give some love to the spicy side by talking about some of their favorite savory bakes. Thanks to all of the great Preheated listeners who weighed in on the Facebook page with their favorites: Cheese puffs, savory scones, cornbread, pumpkin cream cheese sage muffins, breakfast strata, and Lamb Swirl Buns! Andrea’s sticking with her savory scones, cornbread, biscuits & gravy, and bagels while Stefin is loving a cornmeal biscuit, cornmeal waffles, sweet potato biscuits, a taco chili pie, and Nigella’s Granny Lawson’s Lunch Dish.
