Fourth of July Berry Fools

If the idea of heating anything is too much for you to handle then look no further than a fool. A fool is a simple summer dessert using nothing more than berries and whipped cream. Both foolishly easy and foolproof, this dessert can be ready in minutes and always tastes delicious.

Berry Fool Instructions

  1. First, macerate your fruit. Place 1 pound of sliced and hulled strawberries or raspberries into a small bowl with 1/4 cup of sugar and a pinch of salt. Stir and let sit until the berries release their juices, 15 – 30 minutes.
  2. Macerate blueberries in a separate bowl if you’d like a traditional ‘red, white and blue’ dessert for the Fourth of July. Cutting a small ‘x’ in the blueberries helps their juices release.
  3. Add one cup of heavy cream to a mason jar with 1 Tbsp. of sugar. Screw the lid on tightly and shake until soft peaks form, usually  around 5 minutes. (This is a great activity to assign a child, however, keep a close eye. Sometimes they get carried away and make butter).
  4. Layer the whipped cream and fruit into glasses and serve.
