Episode 136: Quick Bite: Beer Bread and “Cheat’s” Scones


Stefin’s up with the first of August’s “Quick Bite” episodes, and she’s focusing on three-ingredient bakes to make sure you get the most sweetness in the shortest amount of time this summer. First up: quick breads. Really quick breads, that both use bubbly beverages for flavor and lift.

Preview/Review: Beer Bread and 7-up Scones

Three-Ingredient Bread from Cook’s Country uses self-raising flour, sugar, and beer and goes from start to finish in less than half an hour. Stefin thought it had a nice yeasty flavor that made it seem more involved than it was, and though it veered sweet, she still loved it with soup. (But it would also be great as morning toast.)

Cheat’s Lemonade Scones from Good Housekeeping UK use sparkling lemonade (7-up) for sweetness and leavening, and, along with self-raising flour and double cream, makes for a light and fluffy, slightly citrusy, scone. Stefin thought they were a little less rich than traditional scones (which generally include egg), but, if you’re in a hurry and looking for a quick addition to your tea time offerings, these are a winner.
