Episode 140: New Twists on Old Classics

Bake Along: Cocoa Swirled Banana Bread from Challenge Dairy

To kick off their fall baking, the hosts are taking some standard favorites and adding some sparkle…and nothing is more ripe for reinvention than the humble banana bread. The Cocoa Swirled Banana Bread recipe from Challenge Dairy starts with a method of bagging, smashing, freezing, thawing, boiling and reducing ripe bananas to extract the juice from the pulp. While neither Andrea or Stefin has ever heard of making banana bread this way, they both typically have frozen bananas in their freezer, so they’re willing to give it a try. Stefin’s a fan of adding chocolate to her banana bread, and has a beloved recipe that started off “Light” but she has been modified it to add more fat (and flavor!)

What I Ate on Summer Vacation

Andrea fell in love with Bon Appétit’s Strawberry Raspberry Fool this summer, and officially declared it her “perfect summer dessert” since you can prep the berries ahead of time, shake the cream at the table, and never turn on the oven (or any appliance). Stefin came back home to the Pacific Northwest for a summer vacation and was warmly welcomed by her apple tree, which produced hundreds of pounds of apples she turned into no-peel applesauce, crumbles, crisps, and pies. Andrea used fresh fruit all summer long in her Caprese salads and subbed in peaches for tomatoes, along with watermelon and mint. Stefin also made a delicious cake from a lovely zucchini given to her by Loyal Listener Lydia! Meanwhile, her daughter literally ‘put the icing on the cake’ with real US-style cream cheese frosting. To cap off the summer, Stefin picked about 30 pounds of blueberries and made a delicious bundt cake with them, along with an amazing Blueberry Apple Crumble pie.
