Yearning for an update on Costa Coffee’s “limited-edition” Biscoff Muffin from Episode 147? Stefin’s on the case. While she enjoyed the lightly spiced muffin with the promised core of cookie butter, she was disappointed that the muffin did not come with the much-hyped Biscoff cookie on top. This Week’s Bake Along: Homemade Marshmallows from Foodie with Family

Stefin’s been fascinated by homemade marshmallows since watching Martha Stewart make them years ago, but she was not prepared for the incredible history lesson Andrea prepared, detailing the mythical, magical and even medicinal history of the treat most of us buy in a plastic bag! Did you know that marshmallows have been a treat since the time of Egyptian pharaohs? That they were used as a love potion in the 15th century? Or that they were once considered a remedy for sore throats? (Thanks to Boyer Candy in Altoona, PA, for their marshmallow history!)

This week’s recipe from Foodie with Family has a straightforward and organized approach to this very ancient sweet. In addition to sugar, corn syrup and vanilla, you’ll need powdered gelatin, a stand mixer, and patience: The finished product needs to set for several hours to firm up. Then it’s just a matter of whisking a hot sugar syrup (take care) into softened gelatin, spreading in a greased pan and, once firm, cutting into squares.

Both hosts think this has the potential to be a lovely and unexpected gift this holiday season — and maybe you can delight your recipient with a little of their history, too!
