Episode 152: Carrot Cake Coffee Cake

Andrea and Stefin salute the upcoming holidays … National Cake Day on November 26 and Thanksgiving on November 28! Stefin’s sharing the US Thanksgiving tradition with her British friends, and Andrea is contemplating re-making the Pumpkin Coconut Chiffon Pie and the Sweet Potato Pie she made last year.

Recipe Review: Carrot Cake Coffee Cake from Pinch of Yum

One-Layer Wonders month continues with this great little coffee cake from Lindsay over at Pinch of Yum. Despite their initial misgivings, Andrea’s family absolutely loved (and devoured) this cake, both warm from the oven, and cold the next day. Despite adding a bit too much sugar, Andrea didn’t think this cake was overly sweet, and she especially enjoyed having a carrot cake that wasn’t slathered in cream cheese frosting.

Stefin and her mom also loved this cake, which she made in a 9-inch round. Coffee cake made Stefin a bit nostalgic, as she recalled when she and Listener Annemarie used to cut class to go home and make coffee cake and enjoy a morning chat. (Of course they did the dishes before heading back to school.)

Both the hosts agree that the honey butter is an essential – and delightful – topping for this cake, and Stefin taught Andrea a new British slang term that described it perfectly …more-ish. Five stars and two thumbs up!

Bake Along: Rum Cake from Once Upon a Chef

The Rum Cake from Jenn at Once Upon a Chef looks to be a delicious, boozy way to cap off November’s One-Layer Wonders month. Andrea is excited about making a bundt cake, and contemplating the purchase of a NordicWare Brilliance Bundt pan. This looks like a great cake to make ahead of time and keep handy during the hectic holidays. Bake along and post your photos on the Facebook Listeners Group.

Desserts You Can Whip Up in Five Minutes or Less

With the holidays in full swing, everyone could use a few speedy and easy recipes to stay a bit more sane. Andrea likes making a dessert that most people associate with summer …. milkshakes! These are so fast and easy to whip up. Simply place some milk in a blender, add softened premium ice cream, and then add mix-ins toward the end. Leftover bits of fruit, cookies and candy bars are perfect mix-ins and will help you “Waste Not, Want Not.” Andrea also likes Vegan Brownies (aka Date Bites) and the Raw Banana Split from Minimalist Baker.

Stefin’s a fan of cookie sandwiches, and loves cookie butter between mini pretzels, or tea biscuits. She’ll also take a Bourbon Creme dipped in leftover chocolate frosting!

Andrea’s final entry is a bit of a cheat. Although it does take five minutes or less to make, it does require at least 45 minutes to set in the fridge. Check out the 5 Minute Chocolate Pots from Food Network Canada.
