Episode 180: Shokupan Fluffy White Bread

Andrea and Stefin now know the pan they were trying to conjure last week is called a Pullman Loaf pan, or a Pain de Mie. Reading aloud from Shauna Sever’s Midwest Made cookbook about the history of fresh, hot bread baked and served in trains of yesteryear made Andrea nostalgic for cross country train travel, while Stefin got inspired to produce a month focused on travel treats!

A quick reminder of the ongoing #pantrypurge resolution: check your expiration dates. It’s really important for spices, extracts, and yeast. Learn from Andrea’s mistake and don’t risk ruining a whole loaf of bread because of expired yeast!

Recipe Review: Shokupan from Chopstick Chronicles

Thank you Shihoko for sharing this amazing recipe! When making the Yudane, Andrea substituted for bread flour by using 1 tsp. of vital wheat gluten for every cup of bread flour. Stefin had bread flour, but her Yudane was more sticky and pasty, while Andrea’s was definitely a dough. Both hosts used their stand mixtures for the two rounds of kneading. Andrea found the Shokupan video very helpful with the remaining instructions involving shaping, folding, and rising the bread dough. Both hosts and their families absolutely devoured this bread and loved it. Andrea managed to squirrel away a few slices and found it equally delicious the next day.

Bake Along: Homemade Royce’s Nama Chocolate

Nama (translation: raw) chocolate is modeled after Pave de Geneva from the 1930’s. Andrea thought the recipe looked like a straight-up ganache and is excited to try this simple confection with only five ingredients. Thanks to food blogger Jun from JunandTonic.com for bringing this copycat recipe to the hosts attention. Use the very best ingredients you can find, and bake along and post pictures in the Facebook Listeners group.

Mochi: Cute and Tasty Rice Cakes

The hosts wrap up the show with an exploration of mochi, the cute and tasty rice cakes that are many kid’s favorites. It’s been around for centuries, since the year 795 when mochi was used in New Year’s Festivities. Mochi is not only sweet, and not only prepared in soft round shapes. You can purchase (or make!) savory mochi and it comes in a variety of shapes, including triangles, fish, or on a stick!
