Episode 184: Chilled Out

In honor of the US’s National Ice Cream Month of July, the hosts kick off their Chilled Out month with reminders of favorite ice creams from past seasons, including Roasted Strawberry Buttermilk; Sugar Free Chocolate; Dairy Free, GF Spicy Peanut Butter; Classic Chocolate (with Rocky Road mix ins); and Tahini Chocolate Banana Soft Serve; plus, last summer’s No Bake Cookie Dough Ice Cream Sandwiches.

This Week’s Bake Along: No-Churn Fresh Lemon Ice Cream with Candied Sesame Seeds

After a jaunt down memory lane, with a sidebar about the “World’s Smartest Woman,” the hosts introduce another smart woman, Dorie Sanders’, no churn dairy delight from Food 52’s Genius Desserts cookbook (reprinted in Parade magazine). Will this ice cream join the hosts’ lineup of favorites? With a straightforward, no-cook custard base full of fresh lemon zest and juice, it seems like a strong possibility. (Will Marilyn vos Savant, agree?)

The “extra” in this recipe comes courtesy of the Candied Sesame Seeds, which the hosts surmise will be a bit like a nut brittle. Remember, when making anything with boiling sugar, give it your full attention! (And feel free to use up any leftover black sesame seeds you may have from last month’s Black Sesame Cookies.)

Baking to Freeze

Even if you didn’t make a #20for20 baking resolution to have more cookies in your freezer (like Andrea), you’re sure to find helpful tips and inspiration as the hosts run down the best ways to freeze a variety of desserts, from cookies to cheesecake. Andrea finds that the London Fog (Earl Grey) Shortbread; Double Ginger Spelt Cookies; and Soft and Chewy Gingerbread Cookies are especially adaptable to freezing. Stefin recommends King Arthur Flour’s Monster Cookies, as well as her favorite “urban legend” cookie, the Mrs. Fields’ “$250” Cookie, which makes nearly 12 dozen. And of course she always has a stash of her favorite Ice Cream Sandwiches this time of year!
