Episode 146: Smoked Gouda Dinner Muffins

Andrea starts the show quizzing Stefin on the spices included in a homemade pumpkin spice blend and Stefin rises to the challenge, correctly guessing all five spices in Andrea’s favorite recipe from Pioneer Woman: cinnamon, nutmeg, cloves, ginger and allspice.

Recipe Review: Smoked Gouda Dinner Muffins

Happy Thanksgiving to the Canadian Preheaters! These Smoked Gouda Dinner Muffins from Canadian magazine Chatelaine might be a perfect way to grace your holiday table, if you like onions: the recipe contains a full three cups of onions for only 12 muffins. To balance the savory, the recipe includes a sweet and juicy pear. Andrea found her grated Starkrimson pear to be very juicy and included the juice, while Stefin left the juice from her grated Conference pear on the cutting board. Both hosts were a bit concerned about the lumpy dough, but didn’t run into any lumps in the finished muffins — these muffins were beautiful, especially with the cheese on top.

Andrea mistakenly served her dinner muffins alongside a spicy Indian dish, which didn’t pair well. Stefin cut the recipe in half, which worked very well. While Andrea’s experience serving these at dinner wasn’t great, they held their own the next morning … perhaps they should be a breakfast muffin in her family. Stefin thought these were a sophisticated-looking muffin, and enjoyed the the flavor of the cheese and pear, although the onion was a bit overwhelming.

Bake Along: Cornish Chunkies

The cutest recipe name ever? This “back of the box” recipe from Jus-Rol Pastry is based upon a meal originally meant for miners. Andrea is not familiar with the Cornish Pasty but she’s had other meat pies and enjoyed them, especially the one she had from Lidgate’s in London. Stefin’s excited about using leftovers and thinks Andrea will enjoy using them in this re-invented recipe. Both Andrea and Stefin will be using HP for the “spicy brown sauce” in the recipe, assuming Andrea can find it in the States.

Language Lab: Say What? Desserts with Unusual and Funny Names

Have you heard of a dragon, a mess, a platz, a glory, a cranachan, a tablet, a floating island, or a nonsense? Andrea thinks this entire list sounds like nonsense, but Stefin’s been rummaging through the food history books to discover all sorts of desserts with unusual or funny names.

Stefin’s intrigued by the Newport Lovely and the The Emperor’s Mess (kaiserschmarren) from Austria, while Andrea’s interested in the platz, a Mennonite coffee cake that’s a bit like the better known kuchen, and kind of a cross between a pie and a cake.
