Episode 147: Cornish Chunkies

Move over Pumpkin Spice Latte! The world’s second-largest coffee chain, UK-based Costa, has introduced their “bonfire” range of drinks — latte, hot chocolate and cold brew — to celebrate autumn. Will they be perfect with the chain’s much-ballyhooed Biscoff Muffin? Stefin vows to find out … before October 31! Review: Cornish Chunkies from Jus-Rol Pastry

Both hosts loved using leftovers in the filling for this cute spin on a classic Cornish Pasty. Andrea loved using some of her bountiful parsley harvest, but didn’t care for the spicy brown sauce (a.k.a.. HP Sauce) — nor it’s imported price tag! She was also mystified by the very English direction to “use a saucer” to cut out her pastry. (Note: You use it as a template, not as a cutting device.) She thought the finished pies were cute, but were not a huge hit, flavor-wise, in her house. That said, one of her guests turned the extra pies into a breakfast delight, so there was a happy ending after all.

Stefin’s family like things wrapped in pie crust, so this dish went down a little easier in London. She had best success weighing her pie crust, then dividing equally and rolling each to an eight-inch circle. (Not a saucer in sight!) She also thought the filling was a little dry, so would recommend adding extra HP (or BBQ sauce, or ketchup, or even gravy) to the filling next time. She’s sold on the Jus-Rol pastry, though, after having her second success with this purchased product.

This Week’s Bake Along: Cheddar & Hazenut Shortbread from BBC Good Food

This week’s bake along is the Cheddar & Hazelnut Shortbread from BBC Good Food. Cheese, butter and nuts in a biscuit? Yes please! The Preheated hosts have had good luck with shortbread (see the London Fog Shortbread from Episode 61 for the recipe that started Andrea on a bit of a shortbread odyssey.) This recipe has very few ingredients, so do use the highest-quality butter and cheese you can get your hands on, and make sure to check that your hazelnuts are fresh (especially if they’ve been in your pantry a while). Bake along and let us know how these savoury bites turn out for you!
