June is right around the corner and it’s prime time for “Dads and Grads!” We’d love to know what you’re whipping up to celebrate the fathers and the graduates in your life. Andrea thinks her Father’s Day bake needs to include peanut butter, and Stefin’s recommending Peanut Butter and Chocolate Thumbprint Cookies from Tesco magazine along with the option to replace the peanut butter with tahini. The Peanut Butter Pie from Kevin & Amanda featured in Episode 60 is another good choice, along with the Minimalist Baker’s Tahini Chocolate Banana Soft Serve from Episode 81.

Andrea’s made her very first laddoos from Chetna Makan’s cookbook, The Cardamom Trail. These sweet balls of fig purée combined with almonds, pistachios, cashews, ground cardamom and melted ghee are super easy to make and her daughter rated them “Just like Fig Newtons!”

Stefin made this energy bar recipe gluten-free and vegan by using gluten free oats, substituting Lyle’s golden syrup for honey, and skipping the yogurt and white chocolate drizzle on top. Andrea substituted Fresh As passion fruit powder for fresh passion fruit, which added a delightful passion fruit flavor. Both hosts loved the taste, but had trouble with the texture, and found their bars fell apart. Perhaps some more oats or more rice cereal will help hold this recipe together?

Andrea had a nostalgic bake using Stella Park’s Homemade Oreo Cookie recipe from BraveTart and published on Serious Eats, although she also considered the Faux-reos recipe from Greg Atkinson and the TKO’s from Bouchon Bakery! She ultimately chose Stella’s recipe and was thrilled to use two recently unearthed items from her pantry: coconut extract and a fun Homemade Cookie Stamp.
