Episode 49: Teatime at Home with Caterer Mimi Randall

Stefin starts the show raving about the perfect cake for Fall Festival – the one-bowl Pumpkin Apple Streusel Cake, which will warm your belly as well as your home with some amazing smells. Andrea’s warming up on the couch with Robert Redford and Jane Fonda in their latest movie, Our Souls at Night. If you’re a fan of author Kent Haruf, you’ll find this movie to be a faithful adaptation of his book.

The Victoria Sponge Cake from Lucy’s Bakes presented an interesting challenge to Stefin as the recipe is based on weights and proportional measurements. This recipe has the benefit of being deceptively simple and show-stoppingly gorgeous. While Stefin thinks her technique was on point, her sponge turned out disappointingly dry. Readers, if you’ve ever made a sponge cake, do you any ideas why Stefin’s cake turned out dry?

Andrea picked the Valencia Orange Cake from The Italian Baker by Melissa Forti both because it was naturally gluten-free, and a fairly simple one layer cake. It turned out dense, moist, and decidedly delicious.

Next up is an interview with Mimi Randall, owner of Splendid Cakes and Catering in Plymouth, Minnesota. We talked through her most recent event – a tea party for 30 people. Her menu for this party included chicken salad on apple slices, crostini, tea sandwiches, stuffed tomatoes, and other savory items. Desserts included a Raspberry Almond Layer Cake, Lemon Shortbread Cookies, and several other tea cookies and cupcakes. You’ll enjoy listening to Mimi talk about how she manages her time and handled a last-minute cake challenge.
