Lemon Drizzle Cake

Episode 45: Citrus Success

After a disastrous experience with an usually foolproof banana bread recipe, Andrea introduces a new mini-segment, Almost Edible. Warning: Do not eyeball bourbon or butter (especially when it’s $8.69 a pound!).

English teatime favorite Lemon Drizzle Cake was a hit on both sides of the Atlantic. Andrea enjoyed this one-bowl loaf cake with its straightforward ingredients and directions, and especially loved “stabbing” it to pour over the lemon glaze. Both her family members and neighbors with whom she shared the cake said it’s the best lemon cake they’ve ever tasted! Stefin’s not surprised — it’s one of her family’s favorites, too. She likes to heat the lemon juice to dissolve the sugar for the glaze, and reminds listeners that lemon zest freezes beautifully. Both hosts agree it would be fun to experiment with other citrus — lime, orange, or even grapefruit.

Wrapping up the month of Packable Snacks, the hosts introduce a GF Apple Pie Breakfast Cookie. Stefin is excited to use her favorite English Bramley apples in the recipe, Andrea cautions bakers that coconut sugar is heavier than granulated, so use the measurements specified in the recipe, and both hosts are on board with eating cookies for breakfast.

Finally, the Gadget Garage lives up to its name when Stefin updates listeners on her Step-Up Step-Down Voltage Adapter that allows some of her US appliances to work in the UK. Despite looking, smelling and weighing approximately the same as a car battery, she gives her wholehearted endorsement of this gadget. In a decidedly lower tech find, Andrea is enamored of her new tasting spoon, which both hosts agree would be a great tie-on to a homemade food gift.
